Provenzale Fish (Morue A la Provencale)

1lb. salt cod (or other fish) - Julieta used Seabass

In a large saucepan fry gently until golden:
4 tablespoons olive oil
2 minced clove garlic
3 large chopped onions
1 large sliced leek white part only

Add and simmer gently for about 15 minutes:
1 quart hot water
¼ tomato paste
¼ teaspoon sage
Thyme and rosemary
1 bay leaf
1 small chopped bell pepper red
3 small tomatoes chopped

Add the sauce and simmer until tender. Add the cod or any fish you like to the hot sauce and set the pan over low heat until the cod is heated through. Garnish with triangles of fried French bread. Chopped Parsley and add it. Voila. Ready to eat.
