1/2 t. ground ginger
1 T. honey
1/4 c. fresh lime juice (1-2 limes)
Prepare about 4 cups of some of all of these fruits:
bananas, peeled and sliced
pineapple, peeled and cut into bite-sized pieces
cantaloupe, peeled and cut into bite-sized pieces
mango, peeled and cubed
kiwi, peeled, halved, and sliced into half-circles
strawberries, stemmed and halved
In a small bowl, mix the ginger and honey together well and then stir in the lime juice. Set aside. As you cut the fruit, place it in a large serving bowl, pouring the dressing over it, and stir. The lime juice will keep the fruit from discoloring.
This salad keeps well, covered, in the refrigerator for 2 or 3 hours. If you wish to make the salad several hours ahead of time, omit the bananas and store the salad in the refrigerator. Stir in the bananas a few minutes before serving.
Serve at room temperature or chilled.
