Surf and Turf

1 beef tenderloin
2 doz. large prawns with tails
salt and pepper
3 T. olive oil
2 T. butter
6 cloves garlic
12 sprigs of rosemary

Season beef well with salt and pepper. Slice 3 cloves garlic into slivers and insert into beef. Add one T. olive oil to roasting pan and roast beef at 400 degrees until desired doneness. Meanwhile, clean and shell prawns, leaving tails intact. Mince the remaining 3 cloves of garlic. Heat remaining 2 T. olive oil and 2 T. butter in large, heavy frying pan. Add garlic and sauté for 1 minute. Add prawns and sauté until just pink. Remove from pan and skewer 2-3 prawns on each rosemary sprig. Carve meat into 1-serving slices and arrange on platter, surrounded by prawns.
