1-2 T sesame oil
3 med yellow onions, coarsely chopped
2 boneless skinless chicken breasts
1inch x 5 inch ginger (more!)
6 cloves of garlic
4 Japanese egg plants (or outside 3/4 of 1 lrg eggplant)
3 zucchini
9+ oz white miso
26 oz firm tofu
2+2 c water
½ c sake (or more)
2 T sugar (or less)
8 scallions
Brown chopped onions in oil, then add chicken then garlic, ginger and veggies (do not overcook) except scallions. boil 2c water and dissolve miso, add tofu and simmer a little. add veggies to water and add sake, sugar, and scallions.
Variation: May be made with pork and called Buta Tofu, or veggie, just omit meat.
