Clafoutis

1 to 1 1/2 lbs fruit, cleaned and sliced as needed (peaches, apricots, berries, etc.)
2/3 cup flour
3 eggs
2 T. sugar
3/4 c. milk
pinch of salt
2 T. butter, to butter pan
2 T. sugar, to finish

Preheat oven to 375 degrees

Place the flour in a mixing bowl. Add the eggs, sugar, and salt and stir with a whisk until smooth. Then add the milk, 1/4 c. at a time. (Add a little Cointreau if you wish.) Let the batter rest for a few minutes. (While you prepare the fruit.)

Butter a 10-inch pan. Place the fruit evenly in the pan and pour the batter in. Bake 25-30 minutes until golden brown. Remove from the oven and sprinkle with the sugar.
