2-3 lbs. small assorted potatoes (Yukon gold, purple, red, etc.)
6-10 cloves of garlic
Olive oil
Butter
Preheat oven to 400 degrees. Pour olive into shallow, heavy roasting pan to lightly coat the bottom. Add potatoes and dot with butter. Add garlic. Bake for about an hour, stirring after about 30 minutes.
