Rice Salad

1 pkg. rice pilaf, cooked
½ c. chopped black olives
¼ c. chopped red onion
2 chopped scallions
1 medium chopped green pepper
1 medium chopped tomato
½ c. raisins or dried cranberries
½ c. peanuts or pine nuts

Right before serving, toss all ingredients with 1 t. mustard, 1 T. lemon juice, and ¼ c. oil.

Serves: 6
